Chicken with Orange and Ginger

Ingredients:
1 orange
1/2 tsp ground ginger
1 pinch of salt
1 tsp cornflour
2 chicken joints
1 tsp olive oil
100ml / 3 fl oz dry cider
1 level desertspoon golden syrup
1 tsp grated fresh root ginger

Instructions:
Cut orange in half and cut a fine slice off each for decoration, squeeze the juice from the rest. Cut pith away from about a quarter of the orange skin, then cut zest into fine strips. Mix together the ground ginger, salt and cornflour and rub all over the chicken joints. Heat the oil in a pan and brown the chicken joints all over. Add the cider, orange juice, syrup, grated ginger and the prepared strips of orange zest. Bring to the boil, cover with a lid and simmer gently for about 30 minutes, or until the chicken is tender, Remove the chicken pieces and if there is too much sauce, reduce it a little by boiling over a high heat. Pour the sauce over the chicken and garnish with the orange slices.
