Toad in the Hole

Ingredients:
8 sausages
285ml/ 1/2 pint milk
115g/4oz plain flour
3 eggs
pinch of salt
sunflower oil

Instructions:
Cook sausages in the oven until light brown (just cooked) Mix all ingredients together until smooth, place mixture in a refrigerator for at least 1/2 hour until cold. Place a layer of sunflower oil (approx 5-10 mm) in a large baking tin. Heat oil in an oven on the highest setting until oil is hot. Add sausages and pour batter mixture into baking tin, adding a layer of approximatly 5 - 10mm. Once oven door is closed reduce heat to approximatly 1/3 of highest setting. The secret of perfecting a good Yorkshire pudding is a large tempreture difference between the cold batter mix, and the hot oil, turning down the oven once the batter is in the oven prevents burning of the edges. Keep in oven for 15 - 20 minutes without opening the oven door.
