Instructions: In a saucepan heat the olive oil and add garlic, once hot add tomatos, salt and pepper and pour in stock. Slowly bring to the boil and cook for 15 - 20 minutes until the tomatos are soft. Remove from heat and cool. Once warm, place in a food blender or food processor and puree untol smooth.
