"BORN AGAIN" MEATLOAF CASSEROLE
Ingredients:
2 c. cut broccoli
1/2 c. diced carrots
2 qt. saucepan of cooked brown rice
3/4 can cream of mushroom soup
3/4 c. can 2% milk
2 c. or more of leftover meatloaf
Instructions: Prepare enough brown rice in 2 quart saucepan and pour into casserole dish. Add cream of mushroom soup and milk; mix well. Add broccoli and carrots and diced meatloaf or other leftover meat such as chicken or turkey diced. Bake at about 325 degrees for 30 minutes. Other vegetables may also be used. Sprinkle on soy sauce or season to taste.
